Roasted Pepper Baked Eggs
This speedy brunch dish combines baked eggs with a flavourful roasted red pepper sauce. The eggs are cooked until the whites are set but the yolks remain soft, then served with toasted ciabatta rubbed with garlic. It's a simple yet satisfying meal that can be prepared in a quarter of an hour, perfect for a weekend treat or a light supper.
Ingredients
- 1/2 batch roasted red pepper sauce (see 'Goes well with…' below)
- 4 eggs
- 4 thick slices of ciabatta
- olive oil
- 1 garlic clove
- chopped parsley
Method
- Set your oven to 180C/160C fan/gas 4. Spoon the ½ batch of roasted red pepper sauce into four individual baking dishes. Crack 4 eggs, placing one into each dish. Bake for 7-10 mins until the egg whites are firm and the yolks are soft.
- Arrange 4 thick ciabatta slices on a baking tray. Drizzle them with olive oil and rub with 1 garlic clove. Toast in the oven until golden. Finish the baked eggs with a sprinkle of chopped parsley and black pepper, then serve alongside the warm ciabatta.
