This colourful and satisfying salad combines roasted carrots with cumin, tossed with ready cooked lentils, fresh rocket, cucumber, avocado and crumbled feta. A zesty lemon, honey and mustard dressing brings all the elements together. It is a nutritious option, providing a good source of fibre and calcium, and can be ready in under an hour.

Roasted Carrot, Rocket and Lentil Salad

Ingredients

  • 300g carrots peeled and sliced lengthways
  • 3 tbsp extra virgin olive oil
  • 1/2 tsp cumin seeds
  • 1 lemon zested and juiced
  • 1/2 tsp honey
  • 1/2 tsp wholegrain mustard
  • 250g ready-cooked lentils
  • 1/4 cucumber chopped
  • 80g rocket washed
  • 1 avocado sliced
  • 50g feta crumbled

Method

  1. Set your oven to 200C/180C fan/ gas 6. Combine the carrots with 1 tbsp of the oil, the cumin seeds and seasoning. Arrange them on a baking tray and roast for 30-35 mins until tender and slightly charred at the edges.
  2. While the carrots cook, prepare the dressing by whisking the rest of the oil with the lemon zest, lemon juice, honey and mustard. When the carrots are ready, mix them with all the other salad ingredients, then gently combine everything with the prepared dressing before serving.
