This British side dish creates a deeply flavourful mash by roasting the vegetables first. Sweet potato and squash chunks are cooked with whole garlic bulbs and a red chilli until tender and caramelised. The softened garlic is squeezed from its skin and mashed with the roasted vegetables, then seasoned. The result is a warm, comforting purée perfect for supper or as an accompaniment to a main course. The recipe serves four people and takes roughly 60 minutes to prepare and cook.

Roast Sweet Potato, Squash and Garlic Mash

Ingredients

  • 1kg squash
  • 1kg sweet potato
  • 2 bulbs of garlic halved
  • 1 red chilli
  • 3 tbsp olive oil

Method

  1. Set your oven to 200C/fan 180C/gas 6. Prepare the squash and sweet potatoes by peeling them and cutting into pieces. Share the pieces between two roasting tins along with the halved garlic bulbs and the whole red chilli. Coat everything with the 3 tbsp of olive oil by tossing.
  2. Cook in the oven for 45 mins. Take the chilli, cut it in half and remove the seeds, then chop it finely. Press the roasted garlic from its skins. Combine all the roasted elements and mash them thoroughly. Add seasoning and finish with a little more oil before serving. It pairs well with dishes like roast chicken, chorizo, or blue cheese.
