Roast Apples with Cinnamon Sugar

This comforting British dessert features large Bramley apples, cored and filled with a mixture of dried apricots, breadcrumbs, cinnamon sugar and butter. Roasted with orange juice and water, they become beautifully soft and are served with the resulting sticky sauce alongside custard or vanilla ice cream for a perfect finish to any meal.

Roast Apples with Cinnamon Sugar

Ingredients

  • 50g natural dried breadcrumbs
  • 8 dried apricots roughly chopped
  • 75g cinnamon sugar (see below)
  • 75g butter chopped
  • zest and juice 1 orange
  • 6 large Bramley apples
  • custard or vanilla ice cream, to serve

Method

  1. Set your oven to 180C/160C fan/gas 4. Combine the breadcrumbs, chopped apricots, cinnamon sugar, chopped butter and orange zest in a bowl.
  2. Core each apple using an apple corer. Score a line through the skin around the middle of each apple to prevent them from bursting.
  3. Fill the cavity of each apple with the prepared mixture. Arrange the apples closely in an ovenproof dish. Pour the orange juice mixed with 150ml water around the apples. Roast for 40-50 mins until the apples are tender, browned and holding their form. Serve with the reduced cooking juices and your choice of custard or ice cream.
