Reuben Cabbage Bake
This savoury bake brings together the classic flavours of a Reuben sandwich in a comforting, oven-baked dish. A buttery cabbage and onion mixture is layered with seasoned corned beef and Swiss cheese, all atop a flaky biscuit crust. It bakes until golden and is served in wedges, making it a quick and satisfying meal for six. The combination of ingredients creates a hearty and flavourful result.
Ingredients
- 2 tablespoons butter
- 2 cups chopped cabbage
- 1/2 cup chopped onion
- 5 ounces corned beef, chopped
- 1/4 teaspoon caraway seed
- 1/3 cup shredded swiss cheese
- 1 tablespoon thousand island dressing
- 1 (5 ounce) can ready-to-bake refrigerated buttermilk flaky biscuits
Method
- Set your oven to heat to 375 degrees.
- Melt the butter in a medium skillet, then add the chopped cabbage, onion and caraway seeds, stirring to combine.
- Place a lid on the skillet and cook for 8-10 minutes, stirring now and then, until the vegetables are tender with a slight crispness.
- Take a small bowl and mix the chopped corned beef, shredded Swiss cheese and thousand island dressing together thoroughly.
- Separate the refrigerated biscuit dough into 5 individual biscuits.
- Arrange these biscuits in a round 8 inch pan that has not been greased.
- Press the dough to cover the pan's base and extend about 1/2 inch up the sides, creating a crust.
- Distribute the hot cabbage mixture evenly over the biscuit base.
- Spread the prepared corned beef and cheese mixture over the top of the cabbage layer.
- Bake the dish for 18-25 minutes, until it turns a deep golden brown colour.
- Slice the finished bake into 6 wedges for serving.
