Red Pepper and Tomato Salsa
This vibrant salsa offers a fresh and zesty flavour, ideal as a summery dip or snack. It combines roasted red peppers with juicy cherry tomatoes, a kick of green chilli, and a hint of garlic. Blended with bread for texture and red wine vinegar for tang, it comes together in just 10 minutes. Serve it chilled with tortilla chips or as a lively side dish. Serves 8.
Ingredients
- 100g cherry tomatoes quartered
- 1 garlic clove chopped
- 1 fat green chilli deseeded and chopped
- 200g roasted red peppers from a jar
- 1 crustless slice bread torn up
- 1 tbsp red wine vinegar
Method
- 1. Place the tomatoes, garlic and chilli into a food processor along with the peppers, bread, vinegar, salt and pepper. Pulse the mixture until it forms a coarse purée. 2. Transfer the salsa to a small bowl, cover it with cling film and refrigerate until you are ready to serve.
