These vibrant new potatoes are quartered and fried until golden before being simmered with crushed red pepper flakes. The result is a tender, spicy side dish with a kick, seasoned simply with salt and black pepper. This quick recipe takes only 22 minutes from start to finish, making it an ideal accompaniment for a weeknight meal. It serves four people perfectly.

Red Hot Chilli Pepper New Potatoes

Ingredients

  • 20 ml olive oil
  • 900 g small small red potatoes, rinsed and quartered
  • 1/2 teaspoon crushed red pepper flakes
  • salt & freshly ground black pepper

Method

  1. Warm the olive oil in a non-stick frying pan or skillet until it is very hot. you will know it is ready when the first potato piece sizzles upon contact.
  2. Introduce all the quartered potatoes to the pan and saute them until they achieve an even, browned colour. Scatter the crushed red pepper flakes over them, then cover the pan and let them simmer for approximately 10-12 mins.
  3. Check that the potatoes have become tender. if they are not yet soft, continue cooking them for a little longer.
  4. Add salt and freshly ground black pepper to taste, then transfer the potatoes to a serving dish.
