Really Sticky Ribs
Pork ribs are transformed into a sticky, barbecue-style treat with a simple marinade of passata, garlic, soy sauce, honey and Worcestershire sauce. After marinating, the ribs are baked, first covered and then uncovered, until the sauce reduces to a delicious glaze. This dish is a favourite for family meals and gatherings. It serves six people and takes about 95 minutes to prepare and cook.
Ingredients
- 500g carton passata
- 2 garlic cloves crushed
- 2 tbsp reduced-salt soy sauce
- 1 tbsp Worcestershire sauce
- 1kg small, lean pork ribs
- 3 tbsp honey
Method
- Set your oven to 200C/fan 180C/gas 6. Combine the passata, crushed garlic, soy sauce, honey and Worcestershire sauce in a large bowl.
- Place the pork ribs into the bowl and toss them thoroughly to ensure they are fully coated. Transfer the ribs and all the sauce into a large, shallow roasting tin. Cover the tin with foil and bake for 35 mins.
- Take off the foil and continue baking the ribs for another 45-60 mins. Turn them over a few times during cooking until they become sticky and most of the sauce has evaporated. You can prepare these ahead by cooking or part-cooking the ribs the day before and storing them in the fridge.
