Real Crab Bisque

Ingredients

  • 6 tablespoons unsalted butter
  • 1 cup minced green onion
  • 1/2 cup minced celery
  • 1 tablespoon minced carrot
  • 6 tablespoons all-purpose flour
  • 2 1/2 cups milk
  • 2 1/2 cups low sodium chicken broth
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon white pepper
  • 1/8 teaspoon cayenne pepper
  • 1 cup heavy cream
  • 1/4 cup sherry wine (not cooking sherry!!)
  • 1 lb crabmeat

Method

  1. Melt the unsalted butter using a low heat setting.
  2. Process the green onion, celery, and carrot until minced, then add to the melted butter. Cover the pan and sweat the vegetables until tender, which should take about 5 minutes.
  3. Whisk the all-purpose flour into the vegetable mixture and continue to cook for 2 minutes, stirring the whole time.
  4. Pour in the low sodium chicken broth and milk, whisking to incorporate.
  5. Bring the mixture to a boil, whisking frequently.
  6. As soon as it reaches a boil, promptly stir in the heavy cream, nutmeg, white pepper, cayenne pepper, sherry wine, and the crabmeat.
  7. Warm the bisque thoroughly before serving.
