Real Crab Bisque
This luxurious crab bisque is adapted from a classic recipe. It creates a velvety, flavourful soup featuring fresh crabmeat, enriched with cream and a splash of sherry. Ingredients
- 6 tablespoons unsalted butter
- 1 cup minced green onion
- 1/2 cup minced celery
- 1 tablespoon minced carrot
- 6 tablespoons all-purpose flour
- 2 1/2 cups milk
- 2 1/2 cups low sodium chicken broth
- 1/4 teaspoon nutmeg
- 1/4 teaspoon white pepper
- 1/8 teaspoon cayenne pepper
- 1 cup heavy cream
- 1/4 cup sherry wine (not cooking sherry!!)
- 1 lb crabmeat
Method
- Melt the unsalted butter using a low heat setting.
- Process the green onion, celery, and carrot until minced, then add to the melted butter. Cover the pan and sweat the vegetables until tender, which should take about 5 minutes.
- Whisk the all-purpose flour into the vegetable mixture and continue to cook for 2 minutes, stirring the whole time.
- Pour in the low sodium chicken broth and milk, whisking to incorporate.
- Bring the mixture to a boil, whisking frequently.
- As soon as it reaches a boil, promptly stir in the heavy cream, nutmeg, white pepper, cayenne pepper, sherry wine, and the crabmeat.
- Warm the bisque thoroughly before serving.
