Raw Cauliflower Salad
This is a family favourite that offers a refreshing alternative to a standard salad. It features raw cauliflower combined with colourful vegetables and a zesty dressing. The key is allowing it to marinate for several hours, which tenderises the cauliflower and blends the flavours beautifully. Feel free to adjust the vegetable components based on what is available in your kitchen. The total preparation time is 10 minutes, not including the marinating period.
Ingredients
- 4 cups raw cauliflower, broken into smallish pieces
- 2/3 cup green bell pepper, diced
- 1/2 cup pimiento, diced (you can use the jarred version)
- 1 cup pitted black olives, sliced
- 1/2 cup chopped onions or 1/2 cup shallot
- 3 tablespoons lemon juice
- 3 tablespoons red wine vinegar
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 1/2 teaspoon sugar
- 1/2 cup vegetable oil
Method
- Combine all the ingredients for the marinade in a bowl and whisk them until the mixture is completely smooth.
- Transfer the prepared salad ingredients into a medium bowl and pour the blended marinade over them.
- Place the bowl in the refrigerator and let the salad marinate overnight or for a minimum of a few hours.
