Ravioli Lasagna
This American dinner dish offers a clever twist on classic lasagna by using frozen cheese ravioli as the pasta layers. The casserole is built with a creamy filling of ricotta, spinach and Romano cheese, all bound together with eggs. These layers are assembled with spaghetti sauce in a baking dish and baked until golden and bubbling. It yields one 8x8-inch casserole, serving six people, and requires about 70 minutes from start to finish.
Ingredients
- 2 cups ricotta cheese
- 1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
- 1.5 cups grated Romano cheese
- 2 eggs
- salt and pepper to taste
- 0.25 cup spaghetti sauce
- 1 (25 ounce) package frozen cheese ravioli
- 0.5 cup spaghetti sauce
- 0.5 cup grated Romano cheese
Method
- Set your oven to 375 degrees F (190 degrees C). Prepare an 8x8-inch baking dish by spraying it with cooking spray.
- Combine the ricotta cheese, drained spinach, 1 1/2 cups of Romano cheese, eggs, salt, and pepper in a mixing bowl.
- For assembly, first spread 1/4 cup of spaghetti sauce across the dish base. Arrange a single layer of frozen ravioli over it. Cover this with roughly 1 cup of the ricotta mixture. Repeat this layering sequence three more times, finishing with a final ravioli layer. Top with 1/2 cup of spaghetti sauce and the remaining 1/2 cup of Romano cheese. Seal the dish with aluminium foil.
- Bake the covered dish in your preheated oven for 40 minutes, or until the contents are bubbling. Take off the foil and continue baking for another 10 minutes to lightly brown the cheese topping. Allow it to rest for 10 minutes prior to cutting and serving.
