Ingredients

  • 1 cup white sugar
  • 1 cup shredded coconut
  • 1 tablespoon butter, softened
  • 5 large egg yolks
  • 1 large egg white

Method

  1. Heat your oven to 350 degrees F (175 degrees C).
  2. Combine the sugar, coconut, and butter in a bowl using an electric mixer. Once mixed, incorporate the egg yolks and egg white, beating thoroughly. Transfer this mixture into a 9-inch pie plate.
  3. Set the pie plate inside a large roasting pan. Fill the pan with boiling water until it reaches approximately halfway up the side of the pie plate.
  4. Bake in the heated oven until the custard's surface turns a golden brown colour, about 30 minutes.
  5. Take the custard out of the oven and allow it to cool completely, about 30 minutes. You can serve it straight away or chill it first.
