Quick Sausage Goulash
This quick sausage goulash is a flavourful Eastern European-inspired dish, ideal for a family supper. It uses low-fat sausages, potatoes, and spring greens simmered in a rich tomato and paprika sauce. The recipe is simple to prepare, taking about 50 minutes from start to finish, and yields a satisfying meal for four people. It's a great option for a buffet, lunch, or main course.
Ingredients
- 2 tbsp olive oil
- 454g packet low-fat sausages cut into big chunks
- 2 onions roughly chopped
- 400g can chopped tomato
- 1 tbsp tomato purée
- 1 tbsp bouillon powder (powdered stock)
- 1 tbsp paprika
- good pinch of sugar
- 4 medium floury potatoes cut into large chunks
- 2 big handfuls shredded spring greens
Method
- Warm 1 tablespoon of the olive oil in a large saucepan and cook the sausage chunks until they are browned all over. Take them out of the pan and set them aside.
- Combine the rest of the oil with the chopped onions in the same pan. Cook them for 5 minutes, stirring now and then, until they turn golden. Add the canned tomatoes, scraping the pan base, then mix in the tomato purée. Fill the empty tomato can with water twice, pouring it into the pan. Stir in the bouillon powder, paprika, sugar, and a generous amount of salt and pepper. Bring everything to a boil.
- Add the potato chunks to the pan. Cover it and let it simmer for 10 minutes, giving it an occasional stir.
- Place the shredded spring greens and the browned sausages into the pan. Warm it through gently for 5 minutes until the greens have softened. Check the seasoning and then serve.
