This versatile frittata is a reliable meal solution, ready in just 30 minutes. It combines crispy bacon or lardons with chunks of courgette, sweetcorn and spinach, all bound with eggs and topped with a creamy garlic and herb soft cheese. Quick Veg and Soft Cheese Frittata

Ingredients

  • 100g lardon or chopped streaky bacon
  • 1 tbsp olive oil
  • 2 large courgettes cut into chunks
  • 350g frozen sweetcorn
  • 400g frozen spinach defrosted and drained
  • 8 eggs
  • 150g pack soft cheese with garlic and herbs

Method

  1. In a large non-stick frying pan, cook the lardons or bacon in the olive oil until they begin to brown. Add the courgette chunks and fry for a couple of mins until starting to soften. Stir in the sweetcorn and drained spinach, heating everything through. Season if desired.
  2. Preheat your grill to medium. Whisk the eggs and pour them evenly over the vegetable mixture in the pan. Crumble the soft cheese over the top. Cook gently until the egg is just set around the edges, about 5 mins. Place the pan under the grill and cook until the egg is fully set and the surface is lightly browned. Slice into wedges to serve, ideally with a fresh green salad.
