Quick steak and mushroom stroganoff
This satisfying Eastern European main course delivers a creamy, flavourful sauce with lean rump steak and sliced mushrooms. It's a healthier take on a classic comfort dish, incorporating paprika and red wine vinegar for depth. Ready in just 30 minutes, it's an ideal winter warmer for two people. Ingredients
- 1 tbsp oil
- 1 red onion chopped
- 2 garlic cloves chopped
- 1 tsp paprika
- 1 green pepper chopped
- 200g mushrooms sliced
- 2 tbsp red wine vinegar
- 150ml beef stock
- 200g lean rump steak sliced and all fat removed
- 150ml fat-free fromage frais
Method
- Warm the oil in a pan and cook the chopped onion for a few mins until tender. Stir in the garlic and paprika, cooking for 1-2 mins until aromatic. Mix in the green pepper and sliced mushrooms, frying for 5-8 mins until they soften.
- Pour in the vinegar, boiling it until nearly gone, then add the beef stock and let it bubble for a few mins to thicken a little. Introduce the sliced steak and cook for 2-3 mins to your preferred doneness, then fold in the fromage frais and season. Accompany with rice or tagliatelle.
