Quick Pepper Steak
This quick pepper steak is a flavourful weeknight meal prepared in under 60 minutes. Thin strips of beef round steak are browned before being simmered with green peppers and onion in a savoury sauce made from cream of mushroom soup, soy sauce and catsup. The dish cooks for 45 minutes until the meat becomes beautifully tender. It is traditionally served over a bed of rice for a complete and satisfying dinner.
Ingredients
- 1 beef round steak, cut in strips
- 1 tablespoon vegetable oil
- 1 can cream of mushroom soup
- 1/4 cup catsup
- 4 tablespoons soy sauce
- 1 large green pepper, cut in strips
- 1 medium onion, diced
Method
- Warm the vegetable oil in a large skillet.
- Place the beef strips into the skillet and cook, stirring frequently, until they are browned all over.
- Pour in the cream of mushroom soup along with 1 can of water.
- Stir the catsup and soy sauce into the skillet.
- Add the strips of green pepper and the diced onion to the mixture.
- Allow everything to simmer for 45 minutes, or until the meat is tender.
- Serve the finished pepper steak over cooked rice.
