Quick Gazpacho
This simple gazpacho transforms leftover salad into a refreshing chilled soup. Using ingredients like tomatoes, lettuce, cucumber, and red onion, it is blended to your preferred texture. After chilling, it is served in small bowls or glasses and finished with miniature croutons and diced cucumber. The total preparation and chilling time is 30 minutes, yielding 6 to 8 servings.
Ingredients
- 2 cups tomatoes, diced
- 2 -3 medium peeled tomatoes, additional, so the soup won't look sick (optional)
- 1 cup any type lettuce, chopped
- 1/2 cup cucumber, diced
- 1/2 cup red onion, diced
- salt and pepper or other seasoning, if needed
- miniature crouton, for a garnish
- tiny diced cucumber, bits for a garnish
Method
- You can choose to remove any cheese from the salad before blending, or leave it in for added flavour.
- Place the leftover salad and the extra peeled tomatoes into a blender and process until it reaches your desired consistency.
- Taste the mixture and add salt, pepper, or other seasonings as required.
- Place a lid on the soup and chill it completely in the fridge.
- Pour the chilled soup into small bowls or champagne glasses for serving.
- Garnish each portion with miniature croutons and tiny bits of diced cucumber.
