Quick Fruit Compote

Ingredients

  • 500g mixed berries (blackcurrants, blueberries, raspberries, redcurrants, strawberries)
  • 50-85g/2-3oz golden caster sugar
  • 1 vanilla pod
  • 1 cinnamon stick
  • 2-3 sprigs of fresh mint or lemon balm

Method

  1. For any strawberries, remove the hulls and cut them into halves or quarters to match the size of the other berries. Place all the fruit into a large saucepan along with 2-3 tbsp water, your preferred amount of sugar, and the chosen flavourings.
  2. Allow the mixture to reach a boil, then reduce the heat and let it simmer for 3-5 mins. Be careful not to cook it for too long, so the fruits maintain their form. It can be refrigerated for up to 2 days or frozen for up to 3 months.
