Quick Fruit Compote
This British condiment is a speedy way to prepare a vibrant fruit compote. Combining mixed berries with sugar and aromatic flavourings like vanilla and cinnamon, it cooks in just a few minutes. The result is a versatile sauce that holds the fruit's shape beautifully. It is delicious served either warm or chilled alongside your preferred pudding and can be stored for future use.
Ingredients
- 500g mixed berries (blackcurrants, blueberries, raspberries, redcurrants, strawberries)
- 50-85g/2-3oz golden caster sugar
- 1 vanilla pod
- 1 cinnamon stick
- 2-3 sprigs of fresh mint or lemon balm
Method
- For any strawberries, remove the hulls and cut them into halves or quarters to match the size of the other berries. Place all the fruit into a large saucepan along with 2-3 tbsp water, your preferred amount of sugar, and the chosen flavourings.
- Allow the mixture to reach a boil, then reduce the heat and let it simmer for 3-5 mins. Be careful not to cook it for too long, so the fruits maintain their form. It can be refrigerated for up to 2 days or frozen for up to 3 months.
