These self assembled vegetarian wraps are a fantastic family meal with a Mexican flair. Ready in only 20 minutes, the recipe features a quick simmered filling of beans, tomatoes and fajita seasoning. Serve the warm mixture in soft tortillas with classic toppings like grated cheese, guacamole and soured cream, finished with fresh herbs. It's an easy dish that can be doubled to feed a crowd, ideal for a speedy dinner, lunch or casual supper.

Quick Chilli Bean Wraps

Ingredients

  • 1small onion sliced
  • 1 tbsp vegetable oil
  • 400g can mixed beans drained and rinsed
  • 400g can chopped tomatoes
  • 30g sachet fajita seasoning (we like Discovery), or 2 tbsp Cajun seasoning
  • 8 soft corn tortillas wraps (Old El Paso are good)
  • grated cheese guacamole and soured cream
  • handful coriander or parsley, roughly chopped

Method

  1. Cook the sliced onion in the oil for 5 mins until soft. Add the beans, chopped tomatoes and seasoning, then let it simmer for 10 mins, giving it a stir now and then.
  2. While the bean mixture cooks, heat the soft tortilla wraps in a microwave on High for 1 min.
  3. Place a generous spoonful of the bean mix down the middle of each warm wrap. Add some grated cheese, a dollop of guacamole and soured cream, and finish with chopped coriander or parsley. Roll each wrap into a tight cylinder and serve immediately.
