This classic French starter is a fresh and healthy way to enjoy celeriac without any cooking. Grated celeriac is combined with a creamy, tangy sauce made from mayonnaise, Dijon mustard and lemon juice. It is a simple, no-cook side dish that comes together in about 20 minutes. Serve it with toast and dressed watercress for a traditional presentation. The remoulade can be stored in the refrigerator for up to 2 days.

Quick Celeriac Remoulade

Ingredients

  • 7 tbsp good quality mayonnaise
  • 3 tbsp Dijon mustard
  • 1 lemon juice only
  • 1small celeriac about 650g/1lb 7oz
  • toast and watercress to serve

Method

  1. Combine the mayonnaise, Dijon mustard and lemon juice in a large bowl, seasoning generously with salt and freshly ground black pepper. Mix thoroughly until you have a uniform sauce.
  2. Peel the celeriac and cut it into quarters. Working swiftly, coarsely grate the celeriac and stir it into the prepared sauce until it is evenly coated. Serve the remoulade with plenty of toast and some dressed watercress. It can be kept in the fridge for up to 2 days.
