Quick Braised Lettuce and Peas
This French side dish offers a light and fresh accompaniment. Pearl onions are softened before being browned, then combined with garden peas and finely shredded Baby Gem lettuce. The lettuce is gently warmed through to retain its texture. It is a straightforward preparation that yields a vibrant vegetable dish suitable for a variety of mains.
Ingredients
- 16 halved pearl onions
- 300g frozen pea
- 2 tbsp olive oil
- 3 Baby Gem lettuces finely shredded
Method
- Boil the pearl onions for 5 mins until soft. Separately, cook the frozen peas for 2 mins in boiling water until just done.
- Warm the olive oil in a frying pan. Brown the cooked onions, then mix in the peas and shredded lettuce. Heat just until the lettuce is warmed, then season and serve.
