- 1/4 cup barbecue sauce (I use Open Pit)
- 1 tablespoon butter
- 1/4 cup onion, chopped
- 2 slices bacon, cut into match stick lengths
- 1 clove garlic, minced
- salt and pepper
- 1 tablespoon horseradish, reserve for sauce
Method
- Melt the butter in a saute pan, then introduce the bacon, onion and garlic.
- Cook the ingredients until the onion and garlic have softened, ensuring they do not take on colour.
- Pour in the barbecue sauce and let the mixture simmer gently for 10 minutes.
- Transfer the bean mixture to a serving bowl using a slotted spoon.
- Using the slotted spoon ensures sufficient sauce stays with the beans while leaving ample liquid in the pan.
- To the sauce remaining in the saute pan, add 1 TB. horseradish.
- Allow the horseradish sauce to simmer until thoroughly heated.
- Serve this sauce separately to drizzle over steak. it is also excellent with ham steak.
- This dish pairs well with ham or steak, accompanied by hot rolls and cole slaw.
