Puerto Rican Pork a La Criolla
This Puerto Rican pork roast is packed with flavour from a simple rub of garlic, black pepper, oregano and cider vinegar. It requires minimal preparation before roasting in the oven for roughly an hour and a half. The result is a succulent, aromatic main dish that serves six to eight people. Any leftovers are excellent for sandwiches the next day.
Ingredients
- 1 (3 lb) boneless pork loin roast
- 1 tablespoon fresh coarse ground black pepper
- 4 cloves garlic, minced (more if you like...)
- 1 teaspoon dried oregano
- 1 1/2 tablespoons cider vinegar
- 1 1/2 tablespoons olive oil
- 3/4 tablespoon salt
Method
- Set your oven to heat to 350 degrees F.
- Mix the pepper, minced garlic, oregano, cider vinegar, olive oil and salt together in a small bowl, then massage this paste thoroughly over the entire pork loin.
- Put the seasoned roast into a shallow baking pan and cook it uncovered at 350 degrees F for approximately 1-1/2 hours, until a meat thermometer registers 165 to 170 degrees F.
- Take the pork out of the oven and allow it to sit for 10 minutes prior to carving.
