Prosciutto-Wrapped Peaches
This popular Italian restaurant dish is a delightful combination of flavours and textures. Sweet, ripe peach wedges and torn pieces of fresh mozzarella are bundled together with a slice of prosciutto. The parcels are served on a bed of peppery rocket and finished with a simple, spicy oil made from chopped red chilli and olive oil. It makes an elegant and quick starter, lunch, or snack for four people.
Ingredients
- 1 red chilli deseeded and finely chopped
- 8 tbsp olive oil
- 3 peaches each cut into 4 wedges
- 12 slices prosciutto
- 2 balls mozzarella torn into 12 chunks
- handful of rocket leaves
Method
- Combine the finely chopped chilli with 8 tbsp of olive oil and leave it to one side. For each parcel, take one peach wedge and one chunk of mozzarella, then encase them together using a slice of prosciutto.
- Arrange three of the wrapped parcels on every plate. Add a handful of rocket leaves around them and finish by drizzling the reserved chilli oil over everything immediately before you serve.
