This popular Italian restaurant dish is a delightful combination of flavours and textures. Sweet, ripe peach wedges and torn pieces of fresh mozzarella are bundled together with a slice of prosciutto. The parcels are served on a bed of peppery rocket and finished with a simple, spicy oil made from chopped red chilli and olive oil. It makes an elegant and quick starter, lunch, or snack for four people.

Prosciutto-Wrapped Peaches

Ingredients

  • 1 red chilli deseeded and finely chopped
  • 8 tbsp olive oil
  • 3 peaches each cut into 4 wedges
  • 12 slices prosciutto
  • 2 balls mozzarella torn into 12 chunks
  • handful of rocket leaves

Method

  1. Combine the finely chopped chilli with 8 tbsp of olive oil and leave it to one side. For each parcel, take one peach wedge and one chunk of mozzarella, then encase them together using a slice of prosciutto.
  2. Arrange three of the wrapped parcels on every plate. Add a handful of rocket leaves around them and finish by drizzling the reserved chilli oil over everything immediately before you serve.
