Prosciutto & Celeriac Twists

These elegant canapés are inspired by a classic French flavour pairing. Fine strips of celeriac are dressed in a creamy mustard and vinegar mixture with fresh parsley, then rolled inside delicate prosciutto. The twists are secured with a toothpick and chilled to firm up, making them an ideal make-ahead party snack. This recipe yields 40 individual bites.

Prosciutto & Celeriac Twists

Ingredients

  • 1 tbsp Dijon mustard
  • 2 tsp white wine vinegar
  • 1 tsp walnut or vegetable oil
  • 100ml double cream
  • 1/2 celeriac
  • handful parsley chopped
  • 10 slices prosciutto or Bayonne ham

Method

  1. In a small bowl, combine the mustard, vinegar and oil with a whisk until smooth. Blend in the double cream. Peel the celeriac and slice it into very thin strips using a mandolin or sharp knife. Cut these strips into matchsticks roughly 5cm long. Toss the celeriac and chopped parsley into the prepared dressing.
  2. Slice each piece of prosciutto in half down the middle, then cut each half lengthways to create four small strips. Spoon about 1 tsp of the celeriac mixture onto each strip. Roll the ham tightly around the filling. Use a toothpick to secure each roll, arrange on a plate and refrigerate for at least 20 mins to set. They can be prepared a few hours in advance and stored chilled until needed.
