Prosciutto & Celeriac Twists
These elegant canapés are inspired by a classic French flavour pairing. Fine strips of celeriac are dressed in a creamy mustard and vinegar mixture with fresh parsley, then rolled inside delicate prosciutto. The twists are secured with a toothpick and chilled to firm up, making them an ideal make-ahead party snack. This recipe yields 40 individual bites.
Ingredients
- 1 tbsp Dijon mustard
- 2 tsp white wine vinegar
- 1 tsp walnut or vegetable oil
- 100ml double cream
- 1/2 celeriac
- handful parsley chopped
- 10 slices prosciutto or Bayonne ham
Method
- In a small bowl, combine the mustard, vinegar and oil with a whisk until smooth. Blend in the double cream. Peel the celeriac and slice it into very thin strips using a mandolin or sharp knife. Cut these strips into matchsticks roughly 5cm long. Toss the celeriac and chopped parsley into the prepared dressing.
- Slice each piece of prosciutto in half down the middle, then cut each half lengthways to create four small strips. Spoon about 1 tsp of the celeriac mixture onto each strip. Roll the ham tightly around the filling. Use a toothpick to secure each roll, arrange on a plate and refrigerate for at least 20 mins to set. They can be prepared a few hours in advance and stored chilled until needed.
