Presto Tuna Pasta
This speedy Italian dish delivers a flavourful tuna and tomato sauce prepared entirely in the microwave. You begin by softening onion and garlic, then add canned tuna, diced tomatoes, and a blend of herbs and seasonings. The sauce cooks quickly before being tossed with hot rigatoni pasta. Ingredients
- 1 medium onion, peeled and chopped
- 2 cloves garlic, peeled and minced
- 1 tablespoon olive oil
- 1 (14 1/2 ounce) can diced tomatoes, drained
- 1 (6 ounce) can tuna, undrained
- 2 tablespoons tomato paste
- 1 tablespoon chopped fresh parsley
- 1 tablespoon lemon juice
- 1 tablespoon white wine
- 1 teaspoon crushed dried oregano
- 16 ounces rigatoni pasta, cooked
Method
- Place the chopped onion, minced garlic, and olive oil into a 2 quart casserole dish and cover it with plastic wrap.
- Cook in the microwave on high for 3 minutes.
- Stir in the drained diced tomatoes, the undrained tuna, tomato paste, parsley, lemon juice, white wine, and crushed oregano.
- Cover the dish again and microwave on high for about six minutes, or until the sauce starts to boil.
- Spoon the hot sauce over the cooked rigatoni pasta to serve.
