Preserved Lemon and Tomato Salad with Feta

Ingredients

  • 4 large fresh tomatoes deseeded and cut into thick strips
  • 1 large red onion thinly sliced
  • 1 preserved lemon pulp removed and rind cut into thin strips (see tip)
  • 200g pack feta cheese
  • 2 tbsp olive oil
  • juice 1/2 lemon
  • small bunch each flat-leaf parsley and mint, finely shredded
  • crusty bread to serve

Method

  1. Combine the tomato strips, sliced red onion and preserved lemon rind in a shallow serving bowl or on a platter. Crumble the feta cheese over the top, then drizzle with the olive oil and lemon juice. Scatter the shredded herbs over everything.
  2. Gently toss the salad ingredients together immediately before you are ready to serve. Accompany with pieces of warm, crusty bread.
