Prawn Stir-Fry

This quick and colourful Chinese prawn stir-fry is prepared in a single pan. Jumbo prawns are sauteed with garlic, then combined with diced courgette, sweet corn kernels, and halved cherry tomatoes. The dish is seasoned with salt and pepper, then finished with a generous sprinkle of fresh basil, Parmesan shavings, and a squeeze of lemon juice. It can be served on its own or with rice or pasta for a complete meal, ready in about 10 minutes.

Prawn Stir-Fry

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 pounds jumbo prawns, peeled and deveined, tails on
  • 4 cloves garlic, minced
  • 2 large courgette, diced
  • 2 large ears of corn, kernels removed
  • 3/4 cup cherry tomatoes, sliced in half lengthwise
  • 3/4 cup yellow cherry tomatoes, sliced in half lengthwise
  • Salt and freshly ground black pepper
  • 12 to 18 fresh basil leaves, cut in chiffonade
  • Parmesan shavings
  • Juice of 1 lemon
  • Rice or pasta, for serving, optional

Method

  1. Combine the butter and olive oil in a large frying pan and melt them together. Add the prawns and minced garlic, cooking until the prawns turn opaque, which should take about 3 minutes. Transfer the cooked prawns to a separate plate.
  2. Turn the heat up to high and add the diced courgette to the pan. Stir it for approximately 45 seconds, then move it to the outer edges of the pan. Place the corn kernels in the centre and cook for a minute, then push them to the sides as well.
  3. Add the halved cherry tomatoes to the pan, stirring them for a minute. Season the vegetables with salt and freshly ground black pepper according to your taste.
  4. Return the prawns to the pan with the vegetables. Stir everything together for about 45 seconds, or until all components are heated through and well combined. Transfer the mixture to a large serving platter.
  5. Scatter the chiffonade of fresh basil leaves and some Parmesan shavings over the top. Finally, squeeze the juice from one lemon evenly over the entire dish before serving. This can be enjoyed on its own or accompanied by rice or pasta.
