Potato Salad with Sweet Onion Dressing
This British side dish is ideal for a buffet or picnic. New potatoes are boiled until tender, then combined while still warm with a dressing made from red onions, garlic, olive oil, and vinegars. The flavour deepens the longer it sits. It serves eight people and is ready in about 25 minutes. You can enjoy it hot or cold.
Ingredients
- 1kg new potato (try a pink variety such as Pink Fir or Anya)
- 2 red onions finely chopped
- 2 garlic cloves crushed
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp cider vinegar
- 1/2 tsp sugar
Method
- Cook the potatoes in salted boiling water for 10-15 mins until they are tender. Prepare the dressing by combining the chopped onions, crushed garlic, olive oil, balsamic vinegar, cider vinegar, and sugar in a bowl while the potatoes boil. Drain the cooked potatoes and toss them with the prepared dressing while they are still hot.
- Transfer the finished salad into a secure container for transport.
