Pork Tenderloin and Pasta in Tomato and Red Bell Pepper Sauce
This Italian-inspired dish combines succulent pork tenderloin pieces with penne pasta in a flavourful sauce. The sauce is made from tomato sauce, cream, sautéed mushrooms, onions, garlic, and red bell peppers, all simmered together. The pork is coated in a seasoned flour before browning, adding depth. Ingredients
- 3 -4 tablespoons butter
- 3 tablespoons oil
- 2 cups sliced mushrooms
- 2 medium onions, chopped
- 1 tablespoon fresh garlic, chopped
- 2 small red bell peppers, chopped
- 1 -2 teaspoon dried oregano
- 1 lb pork tenderloin, cut into about 1-inch pieces
- 2 tablespoons flour
- 1 -2 teaspoon chili powder
- 1 teaspoon seasoning salt (can use regular white salt)
- black pepper
- 1/4 teaspoon cayenne
- 3 cups half-and-half cream or 3 cups full-fat milk
- 1 (14 ounce) can tomato sauce
- 9 ounces penne pasta, cooked and drained (cook only until el dente)

Method
- Melt the butter with the oil in a large frying pan.
- Cook the mushrooms, onions, garlic, red bell pepper and oregano, stirring, until the onions are soft, which takes about 4 minutes, then set this mixture aside.
- Place the flour, seasoning salt, black pepper, cayenne and chili powder into a large, heavy-duty zip-top plastic bag.
- Put the pork cubes into the bag and shake it to coat them thoroughly.
- Remove any extra flour from the pork, then brown the pieces on all sides in the frying pan.
- Return the cooked vegetables to the pan, pour in the cream and tomato sauce, bring to a boil, then cover and simmer for about 30 minutes.
- Stir the cooked and drained penne pasta into the sauce to combine.
- Finish by sprinkling Parmesan cheese over the top before serving.
