Pork Stir Fry

Ingredients

  • 5 tablespoons reduced-sodium soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons sesame oil, divided
  • 1 (1 pound) pork tenderloin, cut into strips
  • 1 fresh red chile pepper, chopped
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 head bok choy, leaves and stalks separated, chopped
  • 2 crowns broccoli, chopped
  • 1 teaspoon ground ginger

Method

  1. Collect all the required ingredients.
  2. In a small bowl, combine the soy sauce, vinegar, and cornstarch with a whisk, then set this mixture aside.
  3. Place a wok over the heat with 1 tablespoon of sesame oil. Once hot, add the pork strips and cook them until just browned, which should take 2 to 4 minutes. Move the pork to a plate and keep the wok on the heat.
  4. Pour the rest of the sesame oil into the wok. Cook the chopped red chile and minced garlic for 15 to 30 seconds until they sizzle. Next, add the chopped onion and green bell pepper, cooking for 2 to 3 minutes until the onion softens.
  5. Mix the chopped bok choy stalks into the wok and continue cooking for about 3 minutes until they begin to soften.
  6. Add the chopped broccoli to the wok and cook while stirring for about 2 minutes until it softens slightly.
  7. Return the pork to the wok along with the bok choy leaves and the prepared soy sauce mixture. Stir everything to combine well. Season with ground ginger and cook while stirring for 5 to 7 minutes, until the bok choy leaves wilt and the broccoli becomes tender.
