This classic German dish features pork loin chops pounded thin, coated in seasoned flour, egg and breadcrumbs, then pan-fried until golden and crisp. The result is a tender and delicious schnitzel, perfect for a quick meal. It is traditionally garnished with parsley and served with lemon wedges. The recipe makes four schnitzels.

Pork Schnitzel

Ingredients

  • 4 medium boneless pork loin chops, fat removed
  • 1 cup unbleached all-purpose flour
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (to taste)
  • 1/4 teaspoon black pepper (to taste)
  • 1/8 teaspoon sea salt (to taste)
  • 2 large eggs
  • 1/4 cup half-and-half
  • 1 1/2 cups breadcrumbs
  • 2 tablespoons clarified butter
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon parsley, chopped for garnish
  • 4 lemon wedges

Method

  1. Cover the pork chops with plastic wrap and pound them with a meat tenderiser until they are roughly ¼-inch thick.
  2. Combine the flour, smoked paprika, cayenne pepper, salt and black pepper in a shallow dish, whisking them together. In a second dish, whisk the eggs with the half-and-half. Place the breadcrumbs in a third shallow dish.
  3. Dredge each pork chop in the flour mixture, coating it well before shaking off the excess. Next, dip it into the egg mixture, then press it into the breadcrumbs to coat evenly. Place the coated chop on a baking sheet and repeat with the others.
  4. Heat the oil and clarified butter together in a large skillet. Once hot, cook the pork cutlets for about 3 minutes on each side until they are brown and crispy. Transfer them to a baking sheet lined with paper towels to drain. Sprinkle with chopped parsley and serve with the lemon wedges.
