Pork Chops with Stewed Tomatoes

Ingredients

  • 1 onion
  • 4 thick cut boneless pork chops
  • salt and pepper to taste
  • 10 ounces fresh mushrooms, sliced
  • 1 (14 ounce) can stewed tomatoes, with juice

Method

  1. Set your oven to 350 degrees F (175 degrees C) to preheat.
  2. Slice the onion thickly and place the pieces in a casserole dish. Position the pork chops on top of the onions and season them with salt and pepper.
  3. Scatter the sliced mushrooms over the chops, then pour the entire can of stewed tomatoes, including the juice, over the top.
