Pork Chops with Mushroom Gravy
These pork chops are coated in seasoned flour, pan-seared, and then baked in a creamy mushroom gravy. The sauce, made with onions, green pepper, and a touch of lemon juice, becomes wonderfully rich during cooking. It's a comforting dish ideal for a family meal, traditionally accompanied by mashed potatoes to soak up all the delicious gravy.
Ingredients
- 6 -8 boneless pork chops (1 inch thick)
- 1/2 cup all-purpose flour
- 1 1/2 teaspoons paprika
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper
- 1/4 cup butter or 1/4 cup margarine
- 1 medium onion, chopped
- 1/2 cup chopped green pepper
- 1 (4 ounce) can mushrooms, drained
- 2 cups milk
- 2 tablespoons lemon juice
Method
- Place the flour, paprika, salt and pepper into a large plastic bag and mix them together.
- Coat each pork chop individually by placing it in the bag and shaking to cover.
- Keep the leftover flour mixture to one side.
- Brown the coated chops in butter within a skillet, then move them to a greased 13x9x2-inch baking dish.
- Using the same skillet, cook the chopped onion, mushrooms and green pepper until they are soft and clear.
- Mix in the saved flour blend, then slowly pour in the milk while stirring continuously.
- Allow the mixture to reach a boil, cooking and stirring for 2 minutes until it thickens.
- Take the skillet off the heat and blend in the lemon juice.
- Cover the pork chops with the prepared sauce, place a lid on the dish and bake at 350 degrees for 50-60 minutes until the pork is fully cooked.
- Enjoy alongside mashed potatoes.
