These grilled pork kabobs combine tender pork cubes with sweet pineapple, onion and mushrooms. The meat is first marinated in a flavourful blend of orange juice concentrate, vinegar, olive oil and soy sauce. After marinating for several hours, the ingredients are threaded onto skewers and grilled until the pork is perfectly cooked. The result is a deliciously balanced dish with sweet and savoury notes, ideal for an outdoor meal.

Pork and Vegetable Kabobs

Ingredients

  • 1/3 cup frozen orange juice concentrate (thawed)
  • 2 tablespoons white wine vinegar or 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1/2 teaspoon dried savory, crushed
  • 1/4 teaspoon fresh ground pepper
  • 1 lb lean boneless pork (I use butterfly pork loins)

  • 1 -2 onion, slices in chunks
  • 1 (8 -16 ounce) can pineapple chunks

Method

  1. Combine all the marinade ingredients in a bowl.
  2. Prepare the meat for marinating.
  3. Remove any excess fat from the pork.
  4. Slice the pork into cubes measuring 1 inch.
  5. Transfer the pork cubes into a plastic bag and pour the marinade over them to coat.
  6. Seal the bag and turn it to ensure the pork is well coated.
  7. Place the bag in the refrigerator to marinate for 2 to 4 hours, turning it occasionally.
  8. Begin assembling the kabobs for grilling.
  9. Take the pork out of the bag, keeping the leftover marinade.
  10. Thread the pork, onion, mushrooms and pineapple alternately onto long metal skewers, leaving about 1/8 inch between pieces.
  11. Cook the kabobs on an uncovered grill directly over medium coals for 12 to 14 minutes until the pork is tender and juices run clear, turning once and brushing with the reserved marinade halfway through.
