Polish Sausage Soup
This comforting soup brings together diced kielbasa, small red potatoes, carrots, celery and onion in a single pot. The ingredients are covered with water and simmered until everything is tender and the flavours have melded beautifully, resulting in a satisfying and straightforward dish.
Ingredients
- 12 small red new potatoes
- 2 onions, diced
- 4 stalks celery, chopped
- 1 pound baby carrots
- 2 pounds kielbasa, diced
Method
- Place the potatoes, diced onion, chopped celery, baby carrots and diced kielbasa into a large pot.
- Pour in enough water to cover all the ingredients completely.
- Set the pot over heat and bring the contents to a rolling boil.
- Once boiling, lower the heat and allow the soup to simmer gently for 1 hour.
