Plum Cake
This plum cake is a sweet and comforting dessert, ideal for finishing a meal. The batter is made with buttermilk and sifted flour, then topped with fresh plum slices and a crumbly mixture of brown sugar, cinnamon, hazelnuts and butter. It bakes to perfection and is best enjoyed warm, perhaps with a scoop of vanilla ice cream. Remember to sift your flour before measuring for the best results.
Ingredients
- 1 1/2 cups sugar
- 1/2 cup canola oil
- 2 eggs
- 1 cup buttermilk
- 3 cups sifted all-purpose flour (12 ounces sifted flour)
- 1/2 teaspoon vanilla
- 3 teaspoons baking powder
- 1 teaspoon salt
- 6 -8 fresh plums (pitted, sliced or quartered)
- 1 cup brown sugar, packed
- 6 tablespoons all-purpose flour
- 1 1/2 teaspoons cinnamon
- 6 tablespoons butter
- 1 cup chopped hazelnuts
Method
- Cream together the sugar, oil and eggs in a mixing bowl until the mixture is light and fluffy.
- Alternately add the buttermilk and vanilla with the sifted flour, salt and baking powder to the creamed mixture.
- Transfer the batter to a greased and floured 9" x 14" glass baking pan, spreading it evenly.
- Arrange the pitted and sliced plums in rows across the top of the batter.
- Mix the brown sugar, 6 tablespoons of flour, cinnamon, butter and chopped hazelnuts together to form a crumbly topping.
- Distribute the crumb topping evenly over the layer of plums.
- Bake the cake at 350° for approximately 1 hour, or until a tester comes out clean.
- Slice the cake and serve it warm, optionally with a scoop of vanilla ice cream.
