This plum cake is a sweet and comforting dessert, ideal for finishing a meal. Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup canola oil
  • 2 eggs
  • 1 cup buttermilk
  • 3 cups sifted all-purpose flour (12 ounces sifted flour)
  • 1/2 teaspoon vanilla
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 6 -8 fresh plums (pitted, sliced or quartered)
  • 1 cup brown sugar, packed
  • 6 tablespoons all-purpose flour
  • 1 1/2 teaspoons cinnamon
  • 6 tablespoons butter
  • 1 cup chopped hazelnuts

Method

  1. Cream together the sugar, oil and eggs in a mixing bowl until the mixture is light and fluffy.
  2. Alternately add the buttermilk and vanilla with the sifted flour, salt and baking powder to the creamed mixture.
  3. Transfer the batter to a greased and floured 9" x 14" glass baking pan, spreading it evenly.
  4. Arrange the pitted and sliced plums in rows across the top of the batter.
  5. Mix the brown sugar, 6 tablespoons of flour, cinnamon, butter and chopped hazelnuts together to form a crumbly topping.
  6. Distribute the crumb topping evenly over the layer of plums.
  7. Bake the cake at 350° for approximately 1 hour, or until a tester comes out clean.
  8. Slice the cake and serve it warm, optionally with a scoop of vanilla ice cream.
