Plaice in a hot vinaigrette

Ingredients

  • 4 large plaice fillets, about 140g/5oz each
  • 3 tbsp olive oil
  • 2 garlic cloves thinly sliced
  • 2 leeks washed, trimmed and shredded into very thin strips
  • 1 lemon plus wedges to serve

Method

  1. Preheat your grill to High. Place the plaice fillets skin-side down on an oiled baking sheet, season with salt and pepper, and drizzle with 1 tbsp of the oil. Grill the fish for 2-3 minutes without turning it.
  2. While the fish cooks, warm the rest of the oil in a small frying pan. Add the sliced garlic and shredded leeks, frying them gently until they become soft and golden. Squeeze in the juice from the lemon, then remove the pan from the heat. Take the fish from under the grill and arrange it on plates. Use a slotted spoon to place the garlic and leeks on top of the fish. Reheat the vinaigrette for a further minute until it is piping hot, then pour it over the fish. Finish with a good grinding of black pepper and serve with lemon wedges.
