Piri-piri Halloumi and Slaw Wraps with Sweet Potato Wedges
This Portuguese-inspired meal is perfect for a casual supper. Crispy sweet potato wedges are baked in the oven. Meanwhile, a vibrant slaw is prepared with shredded vegetables, coriander, yogurt, and lime. Halloumi cheese is coated in piri-piri sauce and griddled until golden. Everyone can assemble their own wraps with the warm halloumi, fresh slaw, and a spicy yogurt sauce, served alongside the wedges. It's a fun, flavourful dinner for four.
Ingredients
- 4 small sweet potatoes
- 1 tbsp vegetable or sunflower oil
- 2 large carrots
- 1 large red onion halved
- 1/2 white cabbage halved and cored
- handful coriander chopped, plus a few leaves to serve
- 200ml natural yogurt
- juice and zest 1 lime
- 225g block halloumi
- 4 tbsp piri-piri sauce (we used medium strength)
- 4 large seeded wraps
Method
- Heat oven to 200C/180C fan/gas 6. Slice the sweet potatoes into wedges, place on a baking tray, and drizzle with oil and seasoning. Toss to coat evenly, then bake for 30 mins, turning them halfway, until golden and crisp.
- While the wedges cook, shred the carrots, onion and cabbage using a food processor or by grating and slicing. Combine with the chopped coriander, 150ml yogurt, the lime juice and zest, and seasoning. Set this slaw aside. In a separate bowl, mix the remaining yogurt with 2 tbsp piri-piri sauce.
- Heat a griddle pan. Slice the halloumi, place in a bowl with the rest of the piri-piri sauce, and toss gently to coat. Cook the halloumi slices in the pan for a few minutes on each side. Warm the wraps in a microwave. To serve, fill wraps with slaw and halloumi, add dollops of the yogurt sauce, and scatter with coriander leaves. Serve with the sweet potato wedges.
