Pineapple Chutney
This British side dish features a sweet and savoury combination of pineapple, onions, and aromatic rosemary, finished with toasted almonds. The ingredients are gently stewed together to create a rich, jammy chutney perfect for serving with cheeses or cold meats. It takes approximately 75 minutes to prepare and yields enough for four people.
Ingredients
- 2 white onions, peeled and diced into small chunks
- 50ml olive oil
- 1 tsp brown mustard seeds, toasted
- Salt and pepper
- 1 garlic clove, peeled and finely sliced
- 1 pineapple, peeled and cut into chunks
- 1 sprig of fresh rosemary
- 1 tbsp (floral) honey
- 120g light brown sugar
- 50g blanched almonds, toasted
Method
- Cook the diced onions in the olive oil within a saucepan for 10-15 minutes until softened.
- Introduce the toasted brown mustard seeds and season with salt and pepper.
- Place the sliced garlic into the pan, then add all the remaining ingredients and give everything a good stir.
- Allow the mixture to simmer gently for 1 hour or longer until it reaches a thick, jam-like texture.
- Taste the chutney and balance the flavour, adding a little more sugar if needed, then adjust the seasoning.
