Pineapple Chutney

Ingredients

  • 2 white onions, peeled and diced into small chunks
  • 50ml olive oil
  • 1 tsp brown mustard seeds, toasted
  • Salt and pepper
  • 1 garlic clove, peeled and finely sliced
  • 1 pineapple, peeled and cut into chunks
  • 1 sprig of fresh rosemary
  • 1 tbsp (floral) honey
  • 120g light brown sugar
  • 50g blanched almonds, toasted

Method

  1. Cook the diced onions in the olive oil within a saucepan for 10-15 minutes until softened.
  2. Introduce the toasted brown mustard seeds and season with salt and pepper.
  3. Place the sliced garlic into the pan, then add all the remaining ingredients and give everything a good stir.
  4. Allow the mixture to simmer gently for 1 hour or longer until it reaches a thick, jam-like texture.
  5. Taste the chutney and balance the flavour, adding a little more sugar if needed, then adjust the seasoning.
