Pignoli (Pine Nut) Cookies
These traditional Italian cookies, also known as pine nut cookies, are a delightful dessert. The recipe combines almond paste, sugar, and egg whites to create a chewy base, which is then generously topped with pine nuts before baking. Ingredients
- 0.5 pound almond paste
- 1 cup white sugar
- 2 egg whites
- 0.25 cup pine nuts
Method
- Break the almond paste into a granulated texture using a pastry chopper or food processor. Transfer it to a mixing bowl and slowly incorporate the sugar.
- Beat the egg whites in a separate small bowl until they form stiff peaks. Gently fold the beaten egg whites into the almond and sugar mixture.
- Drop spoonfuls of the mixture onto a cookie sheet that has been greased and floured. Press pine nuts into the top of each cookie to cover the surface.
- Bake the cookies at 325 degrees F (170 degrees C) for 10-12 minutes. Afterwards, transfer them to a wire rack to cool completely.
