Piernik Honey Bread
This recipe for piernik, a classic Eastern European honey bread, comes from a family tradition. Ingredients
- 1 cup sugar
- 1 teaspoon ground cinnamon
- 0.5 teaspoon ground cloves
- 0.5 teaspoon ground allspice
- 4 eggs
- 0.5 cup milk
- 0.5 cup vegetable oil
- 1 teaspoon baking soda
- 1 cup honey
- 4 cups all-purpose flour
- 0.5 cup raisins
- 0.5 cup chopped walnuts
Method
- Combine the sugar, cinnamon, cloves, allspice, and eggs in a large bowl. Add the milk and oil, then the baking soda. Bring the honey to a boil in a small pot before stirring it into the mixture. Mix in the flour, then fold through the raisins and walnuts. Stir the dough by hand with a sturdy spoon for 10 minutes. Let it rest for 1 hour.
- Set your oven to 325 degrees F (165 degrees C). Grease four 8x4 inch loaf pans lightly.
- Divide the batter between the pans, filling each to about 2 inches deep. Bake in the preheated oven for 1 hour 15 minutes, or until a toothpick inserted into the centre comes out clean. The loaves will be brown and cracked on top.
