This unique picnic loaf encases a savoury filling of beef mince, leeks, cheese and coriander within a hollowed bread crust. After baking, it is wrapped to retain heat, making it an ideal portable meal for outdoor adventures. It serves six people and requires about 60 minutes to prepare and cook. The recipe originates from a community fond of curried mince variations.

Picnic Loaf

Ingredients

  • 1 loaf bread (small)
  • butter
  • 225 g leeks, washed and trimmed
  • 225 g beef mince
  • 30 ml tomato puree
  • 50 g cheese, grated
  • 2 garlic cloves, chopped finely
  • 20 ml ground coriander
  • 1 egg, beaten
  • salt and pepper

Method

  1. Heat your oven. Remove one end from the loaf. Hollow out the soft interior, reserving the crust and its end. Process the removed bread into crumbs using a blender or food processor. Melt a generous amount of butter in a large pan and fry the crumbs until crisp and golden, stirring continuously.
  2. Finely chop the leeks. Combine them in a large bowl with the beef mince, tomato puree, grated cheese, chopped garlic and ground coriander. Add plenty of salt and black pepper. Mix in the crisp breadcrumbs, then fold through the beaten egg.
  3. Pack the filling into the empty bread shell, pressing down gently but filling it completely to the top. Put the cut end back on and secure it with a skewer. Spread approximately 15 g of butter over the entire loaf, focusing on the top. Wrap it fully in foil.
  4. Place the foil parcel in a roasting tin and bake just below the centre of the oven for 1 hour. Once cooked, you can place the foil package inside an insulated bag to keep it hot if needed.
  5. Bring a sharp knife and a chopping board on your outing. Slice the loaf into fairly thick pieces immediately before serving.
