Pickles in a Blanket
This unusual but popular appetiser combines sliced ham with a creamy filling of picante sauce, cream cheese and pecans, wrapped around a whole dill pickle. The rolls are secured with toothpicks, sliced into individual bites and chilled. Despite the surprising ingredient list, these make a great snack for gatherings and are particularly liked by children. The recipe yields about 50 servings and takes roughly 25 minutes to prepare.
Ingredients
- 1 (32 ounce) package of rectangular sliced ham (lunch meat)
- 1 (8 ounce) package cream cheese, softened to room temp
- 1/2 cup picante sauce (works better if is not a "chunky" kind)
- 1/2 cup finely chopped pecans
- 2 (24 ounce) jars kosher dill pickles
Method
- Mix the cream cheese, picante sauce and pecans together in a medium bowl until well combined.
- Lay out a single ham slice and cover it with a thin layer of the cream cheese mixture.
- Position a pickle at one short end of the ham and roll it up firmly.
- Secure the finished roll by inserting toothpicks at intervals of about 1/2 inch.
- Typically, five toothpicks are used for each roll.
- Cut the roll into individual pieces between each toothpick to create bite-sized servings.
- Place the rollups in the refrigerator to chill before serving.
