This unusual but popular appetiser combines sliced ham with a creamy filling of picante sauce, cream cheese and pecans, wrapped around a whole dill pickle. The rolls are secured with toothpicks, sliced into individual bites and chilled. Ingredients

  • 1 (32 ounce) package of rectangular sliced ham (lunch meat)
  • 1 (8 ounce) package cream cheese, softened to room temp
  • 1/2 cup picante sauce (works better if is not a "chunky" kind)
  • 1/2 cup finely chopped pecans
  • 2 (24 ounce) jars kosher dill pickles

Method

  1. Mix the cream cheese, picante sauce and pecans together in a medium bowl until well combined.
  2. Lay out a single ham slice and cover it with a thin layer of the cream cheese mixture.
  3. Position a pickle at one short end of the ham and roll it up firmly.
  4. Secure the finished roll by inserting toothpicks at intervals of about 1/2 inch.
  5. Typically, five toothpicks are used for each roll.
  6. Cut the roll into individual pieces between each toothpick to create bite-sized servings.
  7. Place the rollups in the refrigerator to chill before serving.
