Pesto and Olive Crusted Fish
This Mediterranean dish offers a fast and flavourful supper. White fish fillets are coated with a vibrant crust made from green pesto, fresh lemon zest, chopped green olives and breadcrumbs. The fish bakes until perfectly cooked with a golden, crisp topping. It's a healthy and satisfying main course that comes together in about 20 minutes, ideal for a busy weeknight.
Ingredients
- 2 tbsp green pesto
- finely grated zest 1 lemon
- 10 green olives pitted and roughly chopped
- 85g fresh breadcrumb
- 4 white fish fillets, such as cod or haddock
Method
- Set your oven to 200C/fan 180C/gas 6. Combine the pesto, lemon zest and olives in a bowl, then mix in the breadcrumbs.
- Place the fish fillets on a baking tray with the skin side facing down. Firmly press the crumb mixture onto the top of each fillet. Bake for 10-12 mins until the fish is fully cooked and the crust is crisp and browned.
