Pesto and Tomato Angel Hair Pasta

Ingredients

  • 1 lb angel hair pasta
  • 3 cloves garlic
  • 3 cups fresh basil leaves
  • 1/2 cup pine nuts
  • 2 ounces parmesan cheese
  • 1/2 teaspoon salt
  • black pepper
  • 2/3 cup extra virgin olive oil
  • 1 cup diced tomato

Method

  1. Prepare the angel hair pasta by following the directions on its package.
  2. Start the food processor and feed the garlic cloves through the tube while it runs.
  3. Halt the processor to incorporate the basil leaves, pine nuts, Parmesan cheese, salt, and black pepper.
  4. Pulse the mixture until it is finely minced, then with the processor running, slowly pour in the olive oil through the feed tube until fully combined.
  5. Drain the cooked pasta, remembering to set aside a small amount of the starchy cooking water.
  6. Combine the pasta with the prepared pesto sauce, then gently mix in the diced tomatoes.
  7. Should the pasta mixture seem overly thick, loosen it with a little of the reserved cooking water.
