Peruvian Mashed Beans

Ingredients

  • 1 (16 ounce) bag dry Peruano (Peruvian) beans
  • 3 quarts water, or as needed
  • 1 onion, halved
  • 3 cloves garlic
  • 2 tablespoons chicken bouillon (such as Knorr®)
  • salt and ground black pepper to taste
  • 0.25 cup canola oil

Method

  1. Rinse the dry beans under cold water. Place them in a bowl and cover with water, allowing them to soak for 30 minutes to 1 hour.
  2. Move the soaked beans to a large cooking pot. Pour in 3 quarts of water, then add the halved onion and garlic cloves. Cover the pot and cook on a low heat until the contents come to a boil, which should take about 30 minutes. Stir in the chicken bouillon and add salt. Continue cooking, topping up with more water if required, until the beans become tender. This will take 30 to 40 minutes more.
  3. Warm the canola oil in a skillet. Add several scoops of the cooked beans, one clove of the cooked garlic, and roughly half of the water from the cooking pot. Let this mixture come to a simmer, then mash it thoroughly. Finish by seasoning with salt and ground black pepper.
