- 0.75 cup melted butter
- 0.75 cup brown sugar
- 0.25 cup water
- 2 eggs
- 1 teaspoon vanilla extract

- 0.5 cup white sugar
- 2 teaspoons pumpkin pie spice
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon

- In a large mixing bowl, combine the pumpkin puree, melted butter, brown sugar, water, eggs, and vanilla extract.
- In a separate large bowl, whisk together the all-purpose flour, white sugar, pumpkin pie spice, salt, baking soda, cinnamon, and baking powder. Pour this dry mixture into the pumpkin mixture and stir until fully incorporated.
- Divide the batter evenly among the prepared muffin cups, filling each one about 3/4 full.
- Place in the preheated oven and bake for 25 to 30 minutes, until the muffins are golden in colour and spring back lightly when touched.
