These panini pizzas offer a speedy Italian-inspired meal. Toasted ciabatta rolls are topped with a seasoned mix of roasted peppers and tomato purée, then finished with flaked tuna and torn mozzarella. They are grilled until the cheese is perfectly melted and golden. Ideal for a light lunch, supper or a satisfying snack, this recipe serves four people.

Pepper and Tuna Panini Pizzas

Ingredients

  • 4 ciabatta rolls
  • jar roasted pepper drained
  • 1 tsp tomato purée
  • small handful parsley chopped
  • 200g can tuna drained
  • 125g ball mozzarella torn into small chunks

Method

  1. Set your grill to medium. Halve the ciabatta rolls and toast them lightly on both sides. Cut the peppers into strips and combine them thoroughly with the tomato purée, chopped parsley and a little seasoning. Spoon this mixture onto the toasted bread.
  2. Break the tuna into flakes and distribute it over the pepper layer, then top with the torn cheese pieces. Place under the grill for 3-5 mins until the cheese turns golden and starts to bubble.
