Pepper Steak

Ingredients

  • 2 lbs round steaks, sliced thin
  • 2 tablespoons oil (or cooking spray)
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 (28 ounce) can diced tomatoes (or 1 Quart jar home canned)
  • 1 -2 green pepper, sliced
  • 1/4 cup soy sauce
  • 2 tablespoons cornstarch
  • white rice or brown rice

Method

  1. Slice the round steak into thin strips.
  2. Brown the meat in a skillet using 2 tablespoons of oil or cooking spray.
  3. Put the sliced onion and minced garlic into the skillet and cook for another 5 minutes.
  4. Pour in the diced tomatoes, cover the skillet, and let it simmer for about 30 minutes.
  5. Add the sliced green peppers to the skillet and continue simmering for an additional 20 minutes.
  6. Combine the cornstarch with the soy sauce, then stir this mixture into the meat and tomatoes until it thickens and bubbles.
  7. Serve the stew straight away over hot cooked white or brown rice.
